Dehydrated Tomatoes

This year I grew Classica paste tomatoes to dehydrate specifically for my favorite pasta salad recipe. They are quite expensive to purchase at the grocery and quite easy to dry. I have an old dehydrator that I’ve had for about 16 years that still works like a charm. As I harvest a half a dozen or so of the paste tomatoes, I slice them in 1/4″ rounds and dry them till they are dry but not so much that they are crunchy. The flavor is outstanding. Some people remove the seeds before drying but this variety has very few seeds (as do most paste tomatoes). When I get enough I vacuum seal them and keep them in the freezer. Once a bag is opened they are kept in a wide mouth qt canning jar in the fridge.
